Yummy Dinner

Tonight we had Chimichangas for the second time.  Thanks for my friend Christy we have discovered this recipe.  They are so yummy and easy too!  That's my kind of recipe.  Something that we all enjoy and that's on the table in less than 30 minutes.  All it is, is whatever kind of meat you want seasoned however you want, Ro-tel, refried beans, and cheese all rolled up in a big tortilla.  I have made them with both Chicken (seasoned with taco seasoning) and Ground Beef (seasoned with the liquid fajita marinade) and my my are they scrumptious.  Just fry them up in a pan with a little oil until they are browned and crisp on both sides and Viola!  I do serve them with chips and salsa and Hubby and Turkey eat them with sour cream.  Now I just have to make myself not make they ALL the time so we don't get burnt out on them.
